Madımak, a traditional flavor of Sivas, is consumed fresh in the summer months and adorns tables with its dried form in winter. As challenging as it is to collect, drying Madımak is also a time-consuming process. While the fresh plant costs 100 lira, the dried version finds buyers at 500 lira. During the summer months, Madımak grown in the nature around Sivas is meticulously picked with patience, especially in winter, the dried version sees high demand. Harvested by women collectively in villages in May, this plant can be dried throughout the summer to be consumed during the whole year. Fresh Madımak is sold at 100 lira per kilogram in summer, but its price skyrockets to 500 lira once dried. Known for its antioxidants which have protective properties against cancer and heart diseases, Madımak not only stands out for its health benefits but also as an indispensable flavor in Sivas cuisine, where it is used in various dishes by the locals. Approximately 1 kilogram of dried Madımak can be obtained from 5 kilograms of fresh Madımak.
