Warning: Fraudulent Baklava Alert – Using Spinach Instead of Pistachios

The use of fraudulent ingredients to cut costs in baklava has become more widespread. While various tricks are used to make cheap baklava, experts are warning against baklava priced below 400 Turkish liras. With the approaching Ramadan holiday, baklava makers are in a sweet rush. However, baklava masters are cautioning against inexpensive baklava. The use of fraudulent ingredients to reduce production costs is increasing. Spinach and peas are used instead of pistachios; walnuts are replaced with peanuts or kernels. Antalya Pastry Makers Association President Kerim Üre stated, “They use ready-made syrup; people should avoid treats made with ready-made syrup. There might be peanuts in them, they put kernels to make them look green, they use dyes, attempt to make baklava with pistachios, and use glucose instead of sugar. They use ready-made syrup, not sugar, to make it cheaper, and then hang banners selling baklava for 120 liras per kilogram, claiming it’s 120 liras.” The price per kilogram of walnut baklava ranges from 400 to 600 liras, while pistachio baklava is offered for sale at around 800 to 1000 liras per kilogram. There are health warnings for those who choose to buy baklava priced below 400 liras per kilogram. Ali Manavoğlu, President of the Chamber of Food Engineers Antalya Branch, commented that foreign substances, vegetables like spinach and peas, and synthetic food colorings are used in place of pistachios to make the green more appealing. Manavoğlu warned, “Synthetic food colors can cause allergic reactions, especially in children. Excessive consumption of these products leads to obesity, heart and vascular diseases, increased secretion of hormones due to glucose-like sugars, and we are faced with the risk of cancer, diabetes, and other health issues.” Consumers are advised not to put their health at risk for the sake of cheap baklava.
